- 240 gPassion fruit purée
- 200 gSugar
- 397 gCondensed milk

Prepare gelatin
- Place gelatin (1.5 tbsp / about 14 g) in a small bowl and pour 60 ml lukewarm water over it. Let soak about 5 minutes until softened.

Heat passion fruit mixture
- Combine passion fruit pulp, sugar and the bloomed gelatin in a medium saucepan.
- Heat over medium-high, stirring, until sugar and gelatin are fully dissolved and mixture is smooth. Do not boil. Remove from heat and cool completely.

Stir in condensed milk
- Stir the cooled passion fruit mixture into the sweetened condensed milk until smooth.

Whip egg whites
- In a clean, grease-free bowl beat 6 egg whites with an electric mixer until stiff peaks form.

Fold and chill
- Fold one third of the egg whites into the passion fruit mixture to loosen it, then gently fold in the rest until combined.
- Divide into 4 serving glasses, cover and refrigerate at least 2 hours.
- Garnish with mint before serving.
