Preparation
- Peel the pearl onions.
- Cut the pork belly into small dice (if not already) and blanch briefly, then drain.
- Roughly chop the lettuce and finely chop the parsley.

Sauté
- Melt the butter in a large pot over medium heat.
- Lightly sauté the pearl onions and blanched pork belly until the onions are translucent and the pork begins to brown.

Cook
- Add the shelled fresh peas, lettuce, chopped parsley, a pinch of salt and the sugar.
- Pour in just enough hot water to cover the peas.
- Cover and simmer until the peas are tender (about 8–12 minutes).

Thicken and Serve
- Reserve a little cooking liquid.
- Mix flour with a little cold water to a smooth paste (about 10 g flour).
- Stir the paste into the boiling peas and simmer briefly until the sauce thickens.
- Adjust seasoning and sprinkle with parsley. Serve hot.
