  • 25 gButter
  • 125 gPork belly
  • 650 gPea
  • 150 gSalad
  • 30 gParsley
  • 4 gSugar
  • 0.3 gSalt
  • 200 mlWater
  • 10 gFlour

    Preparation

    • Peel the pearl onions.
    • Cut the pork belly into small dice (if not already) and blanch briefly, then drain.
    • Roughly chop the lettuce and finely chop the parsley.

    Sauté

    • Melt the butter in a large pot over medium heat.
    • Lightly sauté the pearl onions and blanched pork belly until the onions are translucent and the pork begins to brown.

    Cook

    • Add the shelled fresh peas, lettuce, chopped parsley, a pinch of salt and the sugar.
    • Pour in just enough hot water to cover the peas.
    • Cover and simmer until the peas are tender (about 8–12 minutes).

    Thicken and Serve

    • Reserve a little cooking liquid.
    • Mix flour with a little cold water to a smooth paste (about 10 g flour).
    • Stir the paste into the boiling peas and simmer briefly until the sauce thickens.
    • Adjust seasoning and sprinkle with parsley. Serve hot.
