- 30 gCurry paste
- 30 gCoconut milk
- 150 gBell pepper
- 150 gZucchini

Instructions

Marinate and grill
- Heat the barbecue or a griddle pan until very hot.
- Put the chicken, red curry paste and coconut milk into a bowl and mix well until the chicken is evenly coated.
- Cut the pepper, courgette and onion into pieces and thread them alternately with the chicken onto skewers.
- Cook the skewers on the barbecue or griddle for 5–8 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Serve with rice, salad and a lime half for squeezing over.
