Ingredients

  • 2 tspCornstarch
  • 1 tbspSherry
  • 0.5 tspSalt
  • 454 gShrimp
  • 2 tbspPeanut oil
  • 1 tbspGinger
  • 3 pcsGarlic
  • 227 gSugar snap pea
  • 2 tspSoy sauce
  • 60 mlChicken broth
  • 4 pcsGreen onion
  • 2 tspSesame oil

Instructions

    Marinate the shrimp

    • In a large bowl, mix cornstarch, dry sherry and kosher salt.
    • Add the shrimp and toss to coat evenly in the marinade.
    • Let sit 15–20 minutes while you prepare the peas, ginger and garlic.

    Stir-fry ginger and garlic

    • Heat wok or large pan over high heat for 1 minute.
    • Add peanut oil and heat about 30 seconds.
    • Add ground ginger and chopped garlic and stir-fry about 30 seconds until aromatic.

    Add shrimp and snow peas

    • Add shrimp with all marinade to the pan (scrape out all the marinade).
    • Add snow peas, soy sauce and chicken stock.
    • Stir-fry until shrimp turn pink, about 2 minutes.

    Finish

    • Add scallions and stir-fry 1 more minute.
    • Turn off heat and add sesame oil, toss and serve with steamed rice.
