- 2 tspCornstarch
- 1 tbspSherry
- 0.5 tspSalt
- 454 gShrimp
- 2 tbspPeanut oil
- 1 tbspGinger
- 3 pcsGarlic
- 227 gSugar snap pea
- 2 tspSoy sauce
- 60 mlChicken broth
- 4 pcsGreen onion
- 2 tspSesame oil

Marinate the shrimp
- In a large bowl, mix cornstarch, dry sherry and kosher salt.
- Add the shrimp and toss to coat evenly in the marinade.
- Let sit 15–20 minutes while you prepare the peas, ginger and garlic.

Stir-fry ginger and garlic
- Heat wok or large pan over high heat for 1 minute.
- Add peanut oil and heat about 30 seconds.
- Add ground ginger and chopped garlic and stir-fry about 30 seconds until aromatic.

Add shrimp and snow peas
- Add shrimp with all marinade to the pan (scrape out all the marinade).
- Add snow peas, soy sauce and chicken stock.
- Stir-fry until shrimp turn pink, about 2 minutes.

- Add scallions and stir-fry 1 more minute.
- Turn off heat and add sesame oil, toss and serve with steamed rice.
