  • 200 gSpinach
  • 1 pcsOnion
  • 1 cloveGarlic
  • 180 gSoba noodles
  • 3 gSalt
  • 10 gRapeseed oil
  • 30 gTahini
  • 25 gSoy sauce
  • 50 mlWater
  • 10 gRice vinegar
  • 10 gSesame
  • 2 gChili

    Prep ingredients

    • Clean and slice mushrooms
    • Wash spinach
    • Finely slice onion
    • Finely chop garlic

    Cook soba

    • Cook noodles in salted water
    • Drain and rinse cold
    • Let drain well

    Sear mushrooms

    • Heat oil
    • Sweat onion and garlic
    • Sear mushrooms until browned

    Mix the sauce

    • Stir tahini with soy sauce
    • Whisk in water until creamy
    • Round off with rice vinegar

    Combine everything

    • Add spinach to mushrooms
    • Let wilt briefly
    • Toss in noodles
    • Add sauce and toss
    • Serve with sesame and chili
