- 200 gRice noodle
- 15 mlSesame oil
- 2 pcsEgg
- 10 gChili
- 9 gGinger
- 450 gShrimp
- 15 mlSoy sauce
- 20 gCoriander
- 5 gMint
- 1 pcsLime

Prepare & Omelette
- Cook the rice noodles according to the package instructions, drain and set aside.
- Heat the sesame oil in a large frying pan. Pour in the beaten eggs and swirl to make a thin omelette. Cook 1–2 minutes per side, remove and slice into thin strips.

Stir‑fry & Finish
- Fry the chilli and ginger in the same pan for 1–2 minutes until aromatic.
- Add noodles, prawns and the sliced omelette. Splash in the soy sauce and stir‑fry for 1 more minute until prawns are cooked.
- Toss in herbs, pour over lime juice and zest, sprinkle chopped peanuts and serve immediately.
