  • 200 gRice noodle
  • 15 mlSesame oil
  • 2 pcsEgg
  • 10 gChili
  • 9 gGinger
  • 450 gShrimp
  • 15 mlSoy sauce
  • 20 gCoriander
  • 5 gMint
  • 1 pcsLime
  • 30 gPeanut

Instructions

    Prepare & Omelette

    • Cook the rice noodles according to the package instructions, drain and set aside.
    • Heat the sesame oil in a large frying pan. Pour in the beaten eggs and swirl to make a thin omelette. Cook 1–2 minutes per side, remove and slice into thin strips.

    Stir‑fry & Finish

    • Fry the chilli and ginger in the same pan for 1–2 minutes until aromatic.
    • Add noodles, prawns and the sliced omelette. Splash in the soy sauce and stir‑fry for 1 more minute until prawns are cooked.
    • Toss in herbs, pour over lime juice and zest, sprinkle chopped peanuts and serve immediately.
