  • 400 gRice
  • 600 mlWater
  • 14 gButter
  • 12 gSalt
  • 10 gLemon
  • 0.1 gSaffron

    Method

    • If using saffron: soak the threads in 1–2 tbsp hot water for 10 minutes and reserve the saffron water.
    • Rinse the rice in a sieve under cold running water for 5–7 minutes until the water runs clear.
    • Put the water, rice, butter (optional) and salt into a pot.
    • Bring to a rapid boil over high heat.
    • Stir in the lemon juice and saffron water (if using).
    • Cover the pot tightly, reduce the heat to the lowest setting and simmer for 8½ minutes.
    • Taste the rice and cook 1–5 minutes longer if it is still underdone.
    • Fluff the rice with a fork and serve hot as a side dish.
