- 600 mlWater
- 14 gButter
- 12 gSalt
- 10 gLemon
- 0.1 gSaffron

Method
- If using saffron: soak the threads in 1–2 tbsp hot water for 10 minutes and reserve the saffron water.
- Rinse the rice in a sieve under cold running water for 5–7 minutes until the water runs clear.
- Put the water, rice, butter (optional) and salt into a pot.
- Bring to a rapid boil over high heat.
- Stir in the lemon juice and saffron water (if using).
- Cover the pot tightly, reduce the heat to the lowest setting and simmer for 8½ minutes.
- Taste the rice and cook 1–5 minutes longer if it is still underdone.
- Fluff the rice with a fork and serve hot as a side dish.
