- 60 gSugar
- 3 gSalt
- 60 mlWater
- 300 gApple
- 200 gBerries
- 20 gCornstarch
- 15 mlLemon juice
- 2.5 gCinnamon

Make the pastry
- Combine flour and salt in a bowl. Cut the cold butter into cubes and rub into the flour with your fingertips or a pastry cutter until coarse crumbs form.
- Gradually add cold water and bring together quickly into a smooth dough. Do not overwork.
- Divide dough into two pieces (one slightly larger for the base), flatten, wrap in cling film and chill at least 30 minutes.

Prepare the filling
- Peel, core and slice the apples. Wash and drain the berries.
- In a large bowl mix apples, berries, sugar, cornstarch, lemon juice and cinnamon until evenly coated.
- Let sit briefly so sugar and starch distribute.

Assemble and bake
- Preheat oven to 180 °C (160 °C fan).
- Roll out the larger dough portion and line a 24–26 cm tart or pie dish. Press the edges.
- Fill with fruit mixture and dot with small pieces of butter.
- Roll out the second portion, place on top, seal edges and brush with beaten egg. Cut vents in the top crust.
- Bake 40–45 minutes until golden and filling is bubbling. Cover with parchment if browning too fast.

Serve
- Let the tart rest 10–15 minutes after baking to set slightly.
- Slice and serve warm or at room temperature with whipped cream or crème fraîche.
