  • 400 gChicken breast
  • 5 gGarlic
  • 15 gGinger
  • 100 gOnion
  • 8 gCoriander
  • 20 gChili
  • 30 mlOlive oil
  • 80 gChili sauce
  • 50 gLime
  • 20 gGreen onion
  • 5 gSalt
  • 1 gPepper

    Prepare and shape

    • Place the chicken breast, garlic, ginger, onion, coriander and green chilli into a food processor. Season with salt and pepper.
    • Pulse until the chicken is finely ground and the mixture is well combined.
    • Use your hands to shape the mixture into six small cakes.

    Fry and serve

    • Heat the olive oil in a frying pan over medium heat.
    • Fry the cakes for about 6–8 minutes, turning once, until golden and cooked through.
    • Serve hot with sweet chilli sauce, lime wedges, chopped coriander, spring onions and sliced red chilli.
