- 30 mlChili sauce
- 2 gOrange zest
- 30 mlOrange juice
- 3 gGarlic
- 15 gCurry paste
- 1.5 gSalt

Marinate
- Heat the oven to 200°C (180°C fan, gas 6) and line a baking tray with foil.
- Mix the sweet chilli sauce with the orange zest and juice, crushed garlic, red Thai curry paste and 1.5 g salt in a large bowl.
- Add the chicken and coat well with the marinade. Let sit for 5–10 minutes (or longer in the fridge if time allows).

Roast and serve
- Arrange the marinated drumsticks spaced apart on the foil-lined tray.
- Brush any remaining marinade over the chicken.
- Roast for 35–40 minutes until tender and glazed, basting once halfway through.
- Remove from the oven, rest 5 minutes, sprinkle with extra orange zest if desired and serve.
