Ingredients

  • 1200 gChicken thigh
  • 30 mlChili sauce
  • 2 gOrange zest
  • 30 mlOrange juice
  • 3 gGarlic
  • 15 gCurry paste
  • 1.5 gSalt

Instructions

    Marinate

    • Heat the oven to 200°C (180°C fan, gas 6) and line a baking tray with foil.
    • Mix the sweet chilli sauce with the orange zest and juice, crushed garlic, red Thai curry paste and 1.5 g salt in a large bowl.
    • Add the chicken and coat well with the marinade. Let sit for 5–10 minutes (or longer in the fridge if time allows).

    Roast and serve

    • Arrange the marinated drumsticks spaced apart on the foil-lined tray.
    • Brush any remaining marinade over the chicken.
    • Roast for 35–40 minutes until tender and glazed, basting once halfway through.
    • Remove from the oven, rest 5 minutes, sprinkle with extra orange zest if desired and serve.
