Preparation
- Cream the butter (375 g).
- Add the sugar (125 g) and grated nutmeg (about 2 g) and mix well.
- Beat in the eggs (9) one by one until smooth.

Make the dough
- Put the flour (1 000 g) into a large bowl.
- Mix the lukewarm milk (500 ml) with the fresh yeast (48 g).
- Alternately add flour and the milk-yeast mixture to the butter mixture and knead to a smooth dough.
- Finally fold in the raisins (250 g).

Proof & bake
- Place the dough in a greased baking pan and let rise in a warm place until visibly puffed (about 45–60 minutes).
- Bake in a preheated oven at high heat (about 200 °C top/bottom heat) for 30 minutes.
- Brush with melted butter (20 g), sprinkle with sugar (20 g) and return to the oven for 5–10 minutes until shiny and slightly caramelized.
- Cool on a wire rack.
