Ingredients

  • 1000 gWheat flour
  • 395 gButter
  • 145 gSugar
  • 9 pcsEgg
  • 500 mlMilk
  • 250 gRaisin
  • 48 gYeast
  • 2 gNutmeg

    Preparation

    • Cream the butter (375 g).
    • Add the sugar (125 g) and grated nutmeg (about 2 g) and mix well.
    • Beat in the eggs (9) one by one until smooth.

    Make the dough

    • Put the flour (1 000 g) into a large bowl.
    • Mix the lukewarm milk (500 ml) with the fresh yeast (48 g).
    • Alternately add flour and the milk-yeast mixture to the butter mixture and knead to a smooth dough.
    • Finally fold in the raisins (250 g).

    Proof & bake

    • Place the dough in a greased baking pan and let rise in a warm place until visibly puffed (about 45–60 minutes).
    • Bake in a preheated oven at high heat (about 200 °C top/bottom heat) for 30 minutes.
    • Brush with melted butter (20 g), sprinkle with sugar (20 g) and return to the oven for 5–10 minutes until shiny and slightly caramelized.
    • Cool on a wire rack.
