Ingredients

  • 15 mlVegetable oil
  • 300 gBroccoli
  • 4 pcsGarlic
  • 1 pcsChili pepper
  • 100 gGreen onion
  • 140 gSoybean
  • 400 gPak choi
  • 300 gTofu
  • 22.5 mlHoisin sauce
  • 15 mlSoy sauce
  • 25 gCashew nut

    Prepare

    • Cut broccoli into small florets.
    • Halve pak choi lengthwise (quarter if large).
    • Slice garlic and red chilli; cut spring onions into 3–4 cm pieces.
    • Cut marinated tofu into bite-sized pieces if needed and drain soybeans.

    Stir-fry and finish

    • Heat oil in a large non-stick wok or frying pan over high heat.
    • Add broccoli and stir-fry for 5 minutes until just tender; add a splash of water if it starts to stick.
    • Add garlic and chilli, fry for 1 minute.
    • Toss in spring onions, soybeans, pak choi and tofu and stir-fry 2–3 minutes until heated through.
    • Stir in hoisin, soy sauce and cashews to warm, then serve immediately.
