- 51 gEgg yolk
- 10 gHabanero
- 540 gTortilla
- 113 gButter

Bake the tortilla wedges
- Cut the flour tortillas into 10 wedges each.
- Toss the wedges with the melted butter until lightly coated.
- Spread on a baking sheet, sprinkle evenly with 50 g (¼ cup) sugar and bake at 190 °C (375 °F) for 12–15 minutes until golden and crisp. Remove and set aside.

Make the chocolate sauce (double boiler)
- Bring about 2–3 cm of water in a saucepan to a simmer and place a heatproof bowl on top as a double boiler.
- Whisk the egg yolks with 100 g sugar and a pinch of salt in the bowl. Whisk constantly over the simmering water until the mixture thickens and falls in ribbons from the whisk.
- Remove the bowl briefly and add the chopped semisweet chocolate, minced seeded habanero, orange juice and vanilla. Return to the double boiler and whisk until the chocolate is melted and the sauce is smooth and heated through.
- Drizzle the warm chocolate sauce over the baked tortilla wedges and serve immediately.
