Dry ingredients
- Whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, salt and sugar in a large bowl.

- Whisk almond milk, melted coconut oil, applesauce, molasses and vanilla together in a separate bowl.

Combine and bake
- Stir the wet ingredients into the dry until combined.
- Grease a small baking pan, pour in the batter and smooth the surface.
- Bake at 190 °C for about 12 minutes or until a skewer comes out clean. Cool, unmold and serve.
