Prepare
- Preheat the oven to 200 °C (fan 180 °C).
- Grease two 20 cm round cake tins and line with baking paper.

Make the batter
- Cream the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla and mix well.
- Fold in the self-raising flour until the batter is smooth.

Bake
- Divide the batter between the two tins.
- Bake for 20–30 minutes (10–15 minutes fan) until the tops are springy and a skewer comes out clean.
- Cool completely on a wire rack.

Assemble and serve
- Turn one sponge upside down and spread jam over it, then the whipped cream.
- Place the second sponge on top, press lightly and cut into wedges.
