  • 170 gFlour
  • 170 gButter
  • 170 gSugar
  • 3 pcsEgg
  • 1 tspVanilla extract
  • 80 gJam
  • 100 mlCream

    Prepare

    • Preheat the oven to 200 °C (fan 180 °C).
    • Grease two 20 cm round cake tins and line with baking paper.

    Make the batter

    • Cream the butter and sugar together until light and fluffy.
    • Beat in the eggs one at a time, then add the vanilla and mix well.
    • Fold in the self-raising flour until the batter is smooth.

    Bake

    • Divide the batter between the two tins.
    • Bake for 20–30 minutes (10–15 minutes fan) until the tops are springy and a skewer comes out clean.
    • Cool completely on a wire rack.
  4. 4

    Assemble and serve

    • Turn one sponge upside down and spread jam over it, then the whipped cream.
    • Place the second sponge on top, press lightly and cut into wedges.
