Prepare the dough
- Warm the milk to about 37 °C. Dissolve the sugar (15 g) and fresh yeast (25 g) in the milk and let sit 5–10 minutes until bubbly.
- Put the flour (500 g) in a large bowl and make a well in the center. Add the yeast milk, melted butter (192 g), 2 eggs and salt (3 g).
- Knead into a smooth dough (about 8–10 min by hand or 5–7 min with a mixer).
- Cover and let rise in a warm place for 60–90 minutes, until noticeably increased in size.

Prepare the fruit
- Wash, core and thinly slice apples (or halve and pit plums).
- Heat butter (15 g) in a pan, toss the apple slices briefly with sugar (20 g) until slightly softened but not falling apart. Remove from heat.

Assemble and prove
- Roll the risen dough thinly and place on a greased baking sheet or tin.
- Brush with 15 g melted butter, sprinkle with sugar (30 g) and cinnamon (4 g).
- Arrange the warm apple slices closely on the dough, dot with small butter pieces and sprinkle with a little extra sugar and cinnamon if desired.
- Cover and let the assembled cake rest 30–45 minutes in a warm spot until puffed.

Bake and optional cream glaze
- Preheat oven to 220 °C (430 °F). Bake the cake 15–25 minutes until golden and fruit lightly caramelized.
- Optional: Prepare cream glaze 5 minutes before end of baking: mix cream (100 ml), sugar (15 g) and an egg yolk (1). Pour over the almost-baked cake and bake another 5–8 minutes until set.
- Let cool slightly and serve warm.
