  • 45 mlOil
  • 16 gGarlic
  • 100 gBacon
  • 100 gShrimp
  • 50 gPork
  • 25 gGreen onion
  • 50 gPea
  • 100 gEgg
  • 600 gRice
  • 18 gSalt
  • 7 gPepper
  • 30 gJalapeño

    Prepare

    • Weigh and chop all ingredients: mince the garlic, dice the bacon, prawns and char siu, slice the scallions, dice the jalapeño (if using).
    • Lightly beat the eggs.

    Cook and finish

    • Heat the oil in a large non-stick skillet or wok over medium heat.
    • Fry the garlic in the hot oil until golden (watch carefully to avoid burning).
    • Add bacon, prawns and char siu and cook 4–5 minutes until lightly browned.
    • Add scallion, peas and beaten eggs. Stir until the eggs are set.
    • Stir in the cooked rice, salt, pepper and optional jalapeño. Continue stir-frying until everything is heated through and well combined (1–2 minutes).
    • Taste and adjust seasoning if needed. Serve hot.
