- Weigh and chop all ingredients: mince the garlic, dice the bacon, prawns and char siu, slice the scallions, dice the jalapeño (if using).
- Lightly beat the eggs.

Cook and finish
- Heat the oil in a large non-stick skillet or wok over medium heat.
- Fry the garlic in the hot oil until golden (watch carefully to avoid burning).
- Add bacon, prawns and char siu and cook 4–5 minutes until lightly browned.
- Add scallion, peas and beaten eggs. Stir until the eggs are set.
- Stir in the cooked rice, salt, pepper and optional jalapeño. Continue stir-frying until everything is heated through and well combined (1–2 minutes).
- Taste and adjust seasoning if needed. Serve hot.
