Prepare
- Preheat the oven to 180 °C.
- Grease a cake pan (22–24 cm) and line the bottom with baking paper.

Beat eggs and sugar
- Crack the eggs into a large bowl and beat with the sugar for about 5–7 minutes until the mixture is pale and fluffy.

Fold in flour and butter
- Sift the self-raising flour over the egg mixture and gently fold it in to preserve air.
- Fold in the melted, slightly cooled butter until combined.

Add spices and apples
- Add cinnamon, vanilla extract and a pinch of salt and mix briefly.
- Peel, core and dice the apples and gently fold them into the batter so they are evenly distributed.

Bake and finish
- Pour the batter into the prepared pan and smooth the top.
- Optionally place apple slices on top and press lightly. Sprinkle with almond flakes if desired.
- Bake for 45–50 minutes until a skewer inserted in the center comes out clean.
- Allow to cool briefly in the pan, then transfer to a wire rack to cool completely.
- Dust with powdered sugar before serving.
