Method
- Heat the oil in a covered sauté pan. Add the mustard seeds and wait until they finish popping.
- When the seeds stop popping, add the coconut, dried red chiles, curry leaves, chana dhal, cashews and salt. Lightly toast in the oil until the coconut turns golden (about 2–4 minutes).
- Toss the toasted seasoning mixture through the cooked, cooled rice until evenly combined and serve.
