- 200 gToor dal
- 600 mlWater
- 7.5 gSalt
- 1.25 gTurmeric
- 41.4 gGhee
- 240 gTomato
- 1 gCumin
- 1 gMustard seed
- 2 pcsBay leaf
- 9 gChili
- 4 gGinger
- 6 gCoriander
- 1.25 gChili powder
- 5 gSugar
- 0.6 gGaram masala

Soak the dal
- Rinse the toor dal thoroughly.
- Soak in about 3 cups (approx. 720 ml) of water for at least 1 hour until it swells.
- Drain the soaking water.

Cook the dal
- Cook the soaked dal with 600 ml water, 1 tsp (≈5 g) salt and 1/4 tsp turmeric on medium-high heat.
- Simmer for 25–35 minutes until very soft and soup-like in consistency. Add water if necessary.
- Keep warm off the heat.

Prepare the tempering (Tadka)
- Heat ghee in a frying pan.
- Add cumin and mustard seeds. Once they pop, add bay leaves, chopped green chilli, grated ginger and chili powder and stir briefly.
- Add chopped tomatoes, 1/2 tsp (≈2.5 g) salt and 1 tsp sugar. Cook until tomatoes are soft and broken down.
- Stir in cilantro and garam masala for about 1 minute then remove from heat.

Combine & serve
- Pour the tempering over the cooked dal, stir well and simmer 1 more minute so flavors combine.
- Serve hot with naan or rice.
