    Preparation

    • Separate the eggs: place whites and yolks into separate bowls.
    • Whisk yolks with milk, sugar and a pinch of salt until smooth.
    • Gradually fold in the flour while stirring until a thick batter forms.
    • Stir in the raisins.

    Egg whites and batter

    • Beat the egg whites until stiff peaks form.
    • Carefully fold the beaten whites into the yolk-milk-flour mixture to keep the batter airy.

    Fry and shred

    • Melt butter in a large frying pan over medium heat.
    • Pour in the batter and cook until the bottom is set and lightly browned.
    • Quarter the pancake with a wooden spoon or spatula, flip the pieces and then start shredding them into bite-sized pieces with two forks.
    • Keep turning and cooking until golden and cooked through.
