Prepare
- Lightly spread butter on one side of each bread slice.
- Drain sauerkraut well.

Assemble and cook
- Heat a large non-stick skillet over medium heat.
- Place 2 bread slices, butter side down, in the skillet.
- Top each bread slice with 2 slices Swiss cheese, about 1 tbsp Thousand Island dressing, 85 g corned beef and one quarter of the sauerkraut.
- Top with the second bread slice, butter side up.
- Cook sandwiches 4–6 minutes until bread is golden and cheese is melted, turning once.
- Repeat with remaining sandwiches.

- Cut sandwiches in half if desired and serve with extra Thousand Island dressing.
