  • 1 pcsGarlic
  • 10 gParsley
  • 25 gBreadcrumbs
  • 3 gSalt
  • 15 mlOlive oil

    Prepare

    • Beat the eggs in a bowl.
    • Mince the garlic and finely chop the parsley, then add to the eggs.
    • Stir in the breadcrumbs and salt until the mixture is even.

    Cook

    • Heat a non-stick pan over low–medium heat and add a little olive oil.
    • Pour in the egg mixture and cook slowly so it sets evenly, adjusting heat to avoid excessive browning.
    • When nearly set, flip or cover briefly until cooked through.
    • Serve on a plate and sprinkle with extra chopped parsley if desired.
