- Sprinkle the gelatin over 1 tbsp (about 15 ml) of the cream and let it bloom for about 5 minutes.
- Place the remaining cream, sugar, salt and vanilla in a medium saucepan over medium heat. Stir occasionally until the sugar dissolves and tiny bubbles appear at the edge (do not boil).
- Remove from heat and stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into small ramekins and refrigerate for at least 4 hours or overnight until set.
- Serve with fresh berries, a fruit sauce, balsamic reduction or port, if desired.
