  • 400 gWhite cabbage
  • 120 gBacon
  • 2 pcsEgg
  • 1 pcsOnion
  • 1 pcsApple
  • 2 tbspApple cider vinegar
  • 1 tspMustard
  • 100 mlVegetable broth
  • 1 tspCaraway
  • 0.5 bunchParsley
  • 10 gButter
  • 0.75 tspSalt
  • 0.5 tspPepper

Instructions

    Prep the cabbage

    • Thinly shred the white cabbage
    • Core the apple and cut into fine matchsticks
    • Peel and finely dice the onion
    • Roughly chop the parsley

    Render the bacon

    • Cut bacon into strips
    • Render in a pan over medium heat until crisp
    • Drain briefly on paper towels
    • Keep the fat in the pan

    Cook warm dressing

    • Sauté onion in the bacon fat until translucent
    • Stir in vinegar and mustard
    • Add broth and bring to a brief simmer
    • Season with caraway, salt and pepper

    Warm the salad

    • Place cabbage and apple into a bowl
    • Pour the hot dressing over
    • Toss thoroughly
    • Let it sit briefly
    • Fold in bacon and parsley

    Fry the eggs

    • Heat butter in the pan
    • Crack eggs into the pan
    • Fry over medium heat until whites are set
    • Season with salt and pepper

    Plate and serve

    • Divide the warm cabbage salad onto plates
    • Top each with a fried egg
    • Sprinkle with a little parsley
    • Serve immediately
