- 1500 mlWater

- 20 gPotato starch

Preparation and first simmer
- Rinse the dried beans briefly under cold water.
- Place the beans in a large pot with about 1.2–1.5 l cold water, bring to a boil and simmer gently for 30 minutes.
- Drain the beans and discard the cooking water.

Main cooking with potatoes
- Put fresh water (about 1 l) into the pot and stir in the butter. Bring to a boil.
- Add the pre-cooked beans to the boiling buttery broth.
- Place the small potatoes (halved if large) on top of the beans.
- Add salt and simmer covered on low heat until beans and potatoes are tender (about 2 hours total including the first 30 minutes). Add water if needed.

Thickening and serving
- Shortly before serving, mix the potato starch with a little cold water to a smooth slurry and stir into the hot broth until slightly thickened.
- Stir in chopped parsley if using.
- Serve hot. Accompaniments: smoked or cured meat, fried Mettwurst, or ham.
