Prepare
- Preheat the broiler at least 20 minutes before cooking.
- Lightly oil the bottom of a 9x13-inch (23x33 cm) ovenproof dish.

Arrange fish and add vermouth
- Place the fillets in a single layer in the oiled dish.
- Pour in the dry vermouth so that the liquid is about 1 cm deep (do not fully cover the fish).

Broil briefly and finish with butter
- Place the dish as close as possible to the broiler and broil the fish for about 2 minutes.
- Remove the dish and quickly spread the softened butter over the fillets.
- Return the dish to the broiler and cook about 5 minutes more, until the fish is just cooked through.

- Remove the fish from the broiler and season each fillet with salt and freshly ground black pepper.
- Serve with lemon wedges.
