Prepare spice mix
- Combine sweet paprika, smoked paprika, salt, freshly ground black pepper, dried rosemary, cayenne, ground cinnamon and dehydrated lemon peel in a bowl and mix well.
- Set the spice mix aside.

Prepare chicken
- Pat the chicken breasts dry.
- Rub Dijon mustard evenly over all sides of the breasts.
- Press the spice mix onto the mustard-coated chicken so it adheres.

Grill
- Preheat a charcoal grill and set up direct and indirect heat zones.
- Grill the breasts over direct heat, turning often, until internal temperature reaches 74 °C (165 °F).
- If browning too quickly, move to indirect heat until done.

- Remove chicken from the grill and let rest for 3 minutes.
