  • 35 gPaprika powder
  • 18 gSalt
  • 7 gPepper
  • 2 gRosemary
  • 14 gCayenne pepper
  • 2.6 gCinnamon
  • 9 gLemon zest
  • 900 gChicken breast
  • 240 gMustard

    Prepare spice mix

    • Combine sweet paprika, smoked paprika, salt, freshly ground black pepper, dried rosemary, cayenne, ground cinnamon and dehydrated lemon peel in a bowl and mix well.
    • Set the spice mix aside.

    Prepare chicken

    • Pat the chicken breasts dry.
    • Rub Dijon mustard evenly over all sides of the breasts.
    • Press the spice mix onto the mustard-coated chicken so it adheres.

    Grill

    • Preheat a charcoal grill and set up direct and indirect heat zones.
    • Grill the breasts over direct heat, turning often, until internal temperature reaches 74 °C (165 °F).
    • If browning too quickly, move to indirect heat until done.

    Rest and serve

    • Remove chicken from the grill and let rest for 3 minutes.
    • Slice or serve whole.
