Preparation
- Wash and dry the romaine lettuce and halve the heads.
- Peel (if desired), core and slice the tomatoes thinly.
- Peel and core the pineapple and cut into small slices.
- Supreme the oranges (remove peel and membranes) to obtain segments.
- Peel and slice the bananas.
- Lightly season the prepared fruit and lettuce with salt and freshly ground pepper.

- Place the halved romaine heads on a serving platter as a base.
- Alternate slices of tomato, pineapple, orange segments and banana on the romaine halves to form an even, colorful pattern.
- Press gently so the arrangement stays in place.

- Serve the light mayonnaise in a small sauceboat at the side so guests can help themselves.
- Optionally finish with freshly ground pepper.
