  • 1000 gPork loin
  • 40 gBreadcrumbs
  • 50 gApple
  • 10 gButter
  • 15 gMustard
  • 15 mlOlive oil
  • 10 gGrillgewürz

Instructions

    Make the stuffing

    • Melt the butter in a small pan over medium heat.
    • Add the diced apple and sauté 2–3 minutes until slightly softened.
    • Stir in the breadcrumbs and toast briefly until lightly browned. Remove from heat and let cool.

    Prepare the roast

    • Make a slit about 3 cm deep in the center of the pork loin (don’t cut through).
    • Fill the pocket with the cooled apple-breadcrumb stuffing.
    • Brush the opening with Dijon mustard and press closed; secure with kitchen twine or skewers if needed.

    Season and grill

    • Brush the roast with olive oil and rub liberally with grill seasoning.
    • Preheat a charcoal grill to medium heat. Place the roast on the grill and turn regularly so it browns evenly.
    • Grill until the internal temperature reaches 60 °C (about 30–50 minutes depending on size).

    Rest and serve

    • Remove the roast from the grill and let rest for 7 minutes to allow the juices to redistribute.
    • Remove twine, slice the roast and serve immediately.
