Make the stuffing
- Melt the butter in a small pan over medium heat.
- Add the diced apple and sauté 2–3 minutes until slightly softened.
- Stir in the breadcrumbs and toast briefly until lightly browned. Remove from heat and let cool.

Prepare the roast
- Make a slit about 3 cm deep in the center of the pork loin (don’t cut through).
- Fill the pocket with the cooled apple-breadcrumb stuffing.
- Brush the opening with Dijon mustard and press closed; secure with kitchen twine or skewers if needed.

Season and grill
- Brush the roast with olive oil and rub liberally with grill seasoning.
- Preheat a charcoal grill to medium heat. Place the roast on the grill and turn regularly so it browns evenly.
- Grill until the internal temperature reaches 60 °C (about 30–50 minutes depending on size).

Rest and serve
- Remove the roast from the grill and let rest for 7 minutes to allow the juices to redistribute.
- Remove twine, slice the roast and serve immediately.
