Prepare and apply dry rub
- Mix all dry spices in a bowl: cayenne, kosher salt, black pepper, lemon pepper, garlic powder, smoked paprika and brown sugar.
- Rub the spice mix evenly onto the chicken pieces until fully coated.

Marinate
- Cover the rubbed chicken and refrigerate for 1 hour to let flavors penetrate.

Make the BBQ sauce
- Combine tomato paste, honey and apple cider vinegar in a small saucepan and bring to a simmer.
- Simmer until reduced by about one third and the sauce is thickened (about 8–12 minutes). Remove from heat.

Grill and glaze
- Preheat grill to medium heat.
- Place the chicken on the grill, turning often and brushing with the hot BBQ sauce each time you turn, until internal temperature reaches 74 °C.
- Depending on piece size, grilling takes about 12–20 minutes.

Rest and serve
- Remove chicken from the grill and let rest, covered, for 10 minutes.
- Serve with any remaining sauce.
