  • 800 gChicken
  • 6 gCayenne pepper
  • 12 gSalt
  • 6 gPepper
  • 12 gLemon pepper
  • 4.5 gGarlic powder
  • 12 gPaprika powder
  • 25 gBrown sugar
  • 375 gTomato paste
  • 85 gHoney
  • 61 gApple cider vinegar

Instructions

    Prepare and apply dry rub

    • Mix all dry spices in a bowl: cayenne, kosher salt, black pepper, lemon pepper, garlic powder, smoked paprika and brown sugar.
    • Rub the spice mix evenly onto the chicken pieces until fully coated.

    Marinate

    • Cover the rubbed chicken and refrigerate for 1 hour to let flavors penetrate.

    Make the BBQ sauce

    • Combine tomato paste, honey and apple cider vinegar in a small saucepan and bring to a simmer.
    • Simmer until reduced by about one third and the sauce is thickened (about 8–12 minutes). Remove from heat.

    Grill and glaze

    • Preheat grill to medium heat.
    • Place the chicken on the grill, turning often and brushing with the hot BBQ sauce each time you turn, until internal temperature reaches 74 °C.
    • Depending on piece size, grilling takes about 12–20 minutes.

    Rest and serve

    • Remove chicken from the grill and let rest, covered, for 10 minutes.
    • Serve with any remaining sauce.
