Prepare and grill steaks
- Brush steaks with balsamic vinegar and season generously with salt and freshly ground black pepper.
- Grill steaks, covered, over medium‑high heat, turning often, until desired doneness (about 60 °C internal for medium‑rare, 68 °C for medium).
- Remove steaks and let rest for 10 minutes.

Slice steak and assemble paninis
- Slice steaks thinly across the grain and drizzle slices lightly with balsamic.
- Place a slice of Brie on six bread slices, top with steak strips and close with remaining bread slices.

Grill paninis
- Brush outside of sandwiches with melted butter.
- Preheat a grill pan or griddle for 4–5 minutes over medium‑high heat.
- Grill sandwiches (in batches if needed) until browned on both sides and cheese is melted, about 3–4 minutes per side.
- Serve warm.
