- 300 mlBarbecue sauce
- 14 gBell pepper
- 14 gLemon pepper
- 18 gSalt
- 7 gPepper
- 11 gCayenne pepper
- 50 gHickory wood chip

Preparation
- Place the chicken wings (tips removed, halved at the joints) in a large bowl.
- Mix paprika, lemon pepper, salt, cracked black pepper and optional cayenne and toss the wings in the seasoning.
- Brush the wings all over with barbecue sauce. Cover and refrigerate for at least 1 hour, preferably several hours or overnight.

Prepare the grill
- Preheat charcoal in a chimney (about 4.5 lb ≈ 2040 g) until glowing.
- Spread the coals evenly across the bottom of the grill and replace the grate.
- Optional: soak hickory wood chips and add to the coals or in a smoker box for extra smoke.

Grilling
- Place the wings on the grill and turn frequently.
- Brush with additional barbecue sauce during cooking to build a glaze.
- Cook until the internal temperature reaches 74 °C (165 °F) and the skin is nicely browned.

Rest and serve
- Remove the wings from the grill, place on a plate and cover tightly with foil.
- Let rest 5 minutes, then serve hot.
