Ingredients

  • 1920 gChicken wings
  • 300 mlBarbecue sauce
  • 14 gBell pepper
  • 14 gLemon pepper
  • 18 gSalt
  • 7 gPepper
  • 11 gCayenne pepper
  • 50 gHickory wood chip

Instructions

    Preparation

    • Place the chicken wings (tips removed, halved at the joints) in a large bowl.
    • Mix paprika, lemon pepper, salt, cracked black pepper and optional cayenne and toss the wings in the seasoning.
    • Brush the wings all over with barbecue sauce. Cover and refrigerate for at least 1 hour, preferably several hours or overnight.

    Prepare the grill

    • Preheat charcoal in a chimney (about 4.5 lb ≈ 2040 g) until glowing.
    • Spread the coals evenly across the bottom of the grill and replace the grate.
    • Optional: soak hickory wood chips and add to the coals or in a smoker box for extra smoke.

    Grilling

    • Place the wings on the grill and turn frequently.
    • Brush with additional barbecue sauce during cooking to build a glaze.
    • Cook until the internal temperature reaches 74 °C (165 °F) and the skin is nicely browned.

    Rest and serve

    • Remove the wings from the grill, place on a plate and cover tightly with foil.
    • Let rest 5 minutes, then serve hot.
