Cook the rice
- 1) Bring 1 cup (240 ml) dry rice and 2 cups (480 ml) water to a boil.
- 2) Turn heat to low and steam rice for 25–30 minutes (or use a rice cooker).
- Note: 1 cup dry rice yields about 2 cups (approx. 480 g) cooked rice, as used in the ingredient list.

Prepare the soup
- 3) Prepare the dried bean soup mix with 3 cups (720 ml) boiling water and simmer about 5 minutes.
- 4) Add both canned beans (refried and black beans), the green salsa and the cooked rice to the soup.
- 5) Heat through over medium heat, stirring occasionally.
- 6) If desired, spoon 1 tsp sour cream into the center of each bowl just before serving.
