  • 2850 mlWater
  • 30 gRice
  • 30 gBarley
  • 8 gSalt
  • 10 gParsley
  • 50 gButter

    Preparation

    • Rinse the whole chicken and trim excess fat if needed.
    • Cut the chicken into four portions (breasts and leg quarters).

    Cooking

    • Place the chicken, water, rice or pearl barley and salt in a large pot.
    • Bring to a gentle boil, skimming any scum from the surface.
    • Reduce heat and simmer gently until the chicken is fully cooked (about 35–45 minutes).

    Remove and garnish

    • Remove the chicken and arrange on a serving platter.
    • Sprinkle with chopped fresh parsley.

    Strain the broth

    • Strain the broth through a sieve or cloth to obtain a clear stock.
    • Keep hot and adjust seasoning if needed.

    Serve

    • Serve the chicken with a bowl of melted clarified butter for dipping.
    • Serve the hot clear broth on the side in bowls.
