- Rinse the whole chicken and trim excess fat if needed.
- Cut the chicken into four portions (breasts and leg quarters).

Cooking
- Place the chicken, water, rice or pearl barley and salt in a large pot.
- Bring to a gentle boil, skimming any scum from the surface.
- Reduce heat and simmer gently until the chicken is fully cooked (about 35–45 minutes).

Remove and garnish
- Remove the chicken and arrange on a serving platter.
- Sprinkle with chopped fresh parsley.

Strain the broth
- Strain the broth through a sieve or cloth to obtain a clear stock.
- Keep hot and adjust seasoning if needed.

- Serve the chicken with a bowl of melted clarified butter for dipping.
- Serve the hot clear broth on the side in bowls.
