Ingredients
- 800 gBeef
- 800 gPotato
- 30 gFlour
- 30 gButter
- 15 mlOil
- 400 mlWater
- 15 mlVinegar
- 2 gPepper

Prepare
- Rinse the beef briefly, pat dry and, if needed, tenderize with a meat mallet.
- Cut into slices about 3–4 cm thick.
- Season both sides lightly with pepper and a little salt and dredge in flour, shaking off excess.

Brown
- Melt butter in a large heavy pot over medium–high heat (or heat cooking fat).
- Brown the floured beef slices in batches on both sides until colored (about 2–3 minutes per side).
- Return the browned meat to the pot.

Braise
- Cover the pot tightly and braise the meat over very low heat for about 60 minutes.
- After 60 minutes pour in boiling water so it reaches the level of the meat; cover tightly again.
- Simmer for another 60 minutes on low heat until the meat is tender.

Finish & Serve
- Add one tablespoon of vinegar, bring briefly to a boil and season to taste.
- Serve the meat with the sauce alongside boiled potatoes.
