  • 100 gEgg
  • 90 gBroccoli
  • 70 gAlmond
  • 120 gOnion
  • 55 gBreadcrumbs
  • 80 mlWater
  • 5 gSalt
  • 1 gPepper
  • 240 gRoll
  • 60 gMayonnaise
  • 40 gSalad
  • 13.8 gOlive oil

Instructions

    Preparation

    • Preheat the oven to 190 °C (reduce temp 10–20 °C for convection if applicable).
    • Lightly oil a baking sheet (about 30 x 38 cm) or line it with parchment paper.

    Make the mixture

    • Beat the eggs in a large bowl.
    • Stir in chopped broccoli, chopped almonds, red onion, breadcrumbs and water.
    • Season with salt and pepper to taste.

    Form and bake patties

    • Shape the mixture into 4 patties (about 2 cm thick) and place on the prepared baking sheet.
    • Bake at 190 °C for about 25 minutes, turning halfway, until both sides are golden brown.

    Serve

    • Toast the buns. Place a patty on each bun, spread mayonnaise and top with lettuce.
    • Serve immediately.
