  • 60 gFlour
  • 2.5 gSalt
  • 120 mlMilk
  • 200 gChicken breast
  • 80 gRoll
  • 10 gSalad
  • 40 gTomato
  • 30 gOnion
  • 30 mlHot sauce
  • 30 gBlue cheese dressing

    Prepare

    • Mix flour and salt in a shallow dish.
    • Pour milk into another bowl.
    • Pound the chicken breast thin, dredge first in milk, then flour, then milk again and flour a second time. Chill the breaded chicken 10–15 minutes.

    Fry

    • Heat enough oil in a pan or deep fryer to cover the chicken (about 175 °C).
    • Fry the breaded chicken 8–12 minutes until golden, then drain on a rack.

    Coat and assemble

    • Place hot chicken in a lidded bowl, add hot sauce, close and shake gently to coat.
    • Toast the bun faces. Put the chicken on the bun, top with lettuce, tomato and onion rings as desired.
    • Serve open-faced with blue cheese dressing on the side.
