Ingredients

  • 1920 gChicken wings
  • 150 gVegetable oil
  • 15 gSpice mix
  • 113 gButter
  • 120 gHot sauce
  • 60 gTomato paste
  • 15 gSoy sauce
  • 5 gChili

    Prep

    • Pat the chicken wingettes dry and sprinkle evenly with the poultry shake.
    • Heat oil in a large pot or deep-fryer to 180 °C (350 °F).

    Fry

    • Fry the seasoned wingettes in batches in the hot oil for about 11 minutes until golden and cooked through (internal temp ~75 °C).
    • Drain on a cooling rack.

    Sauce and finish

    • While the wings fry, melt the butter.
    • Whisk together melted butter, smoky chipotle hot sauce, tomato paste and soy sauce.
    • Toss the hot wings in the sauce until evenly coated.
    • Garnish with chili leaves if desired and serve immediately.
