- Pat the chicken wingettes dry and sprinkle evenly with the poultry shake.
- Heat oil in a large pot or deep-fryer to 180 °C (350 °F).

Fry
- Fry the seasoned wingettes in batches in the hot oil for about 11 minutes until golden and cooked through (internal temp ~75 °C).
- Drain on a cooling rack.

Sauce and finish
- While the wings fry, melt the butter.
- Whisk together melted butter, smoky chipotle hot sauce, tomato paste and soy sauce.
- Toss the hot wings in the sauce until evenly coated.
- Garnish with chili leaves if desired and serve immediately.
