    • Put bulgur into a pot
    • Pour over hot water
    • Cover and let it swell
    • Fluff and let cool

    • Rinse lentils
    • Simmer in water until tender
    • Drain and let cool

    • Dice beetroot
    • Dice cucumber
    • Finely dice onion
    • Chop herbs

    • Squeeze the lemon
    • Whisk with oil and mustard
    • Season to taste
