- 0.5 pcsOnion
- 4 pcsThyme
- 1 tbspVinegar
- 2 tbspOlive oil
- 100 gChorizo
- 0.5 tspSalt
- 0.25 tspPepper

Prepare the salad
- Wash and slice the tomatoes.
- Peel and thinly slice the red onion.
- Place tomatoes, onion and thyme leaves in a bowl.
- Drizzle with sherry vinegar and olive oil, season with salt and pepper and toss gently. Leave to rest while you cook the chorizo.

Fry the chorizo and serve
- Slice the chorizo thinly.
- Heat a dry frying pan until very hot.
- Fry the chorizo slices 1–2 minutes per side until browned and some fat has rendered.
- Serve the tomato mixture topped with the fried chorizo and drizzle a little of the pan juices over the salad.
