  • 3 pcsTomato
  • 0.5 pcsOnion
  • 4 pcsThyme
  • 1 tbspVinegar
  • 2 tbspOlive oil
  • 100 gChorizo
  • 0.5 tspSalt
  • 0.25 tspPepper

Instructions

    Prepare the salad

    • Wash and slice the tomatoes.
    • Peel and thinly slice the red onion.
    • Place tomatoes, onion and thyme leaves in a bowl.
    • Drizzle with sherry vinegar and olive oil, season with salt and pepper and toss gently. Leave to rest while you cook the chorizo.

    Fry the chorizo and serve

    • Slice the chorizo thinly.
    • Heat a dry frying pan until very hot.
    • Fry the chorizo slices 1–2 minutes per side until browned and some fat has rendered.
    • Serve the tomato mixture topped with the fried chorizo and drizzle a little of the pan juices over the salad.
