- 1 tspCayenne pepper
- 4 pcsFish fillet

- 8 pcsTortilla
- 1 pcsAvocado

- 300 mlSalsa
- 200 gSour cream
- 1 pcsLemon

Season the fish
- On a large plate, mix the cajun spice and cayenne with a little salt and pepper.
- Coat the fish fillets all over with the spice mix.

Cook the fish
- Heat a little oil in a large frying pan over medium heat.
- Add the seasoned fillets and fry until golden.
- Reduce heat and cook for another 6–10 minutes until cooked through. Cook in batches if needed.

Make the dressing
- Combine sour cream, lemon juice, chopped garlic and a pinch of salt and pepper in a bowl.
- Taste and adjust seasoning.

Assemble tacos
- Soften the tortillas in the microwave for 5–10 seconds or warm in a dry pan.
- Fill with avocado, lettuce and spring onions, add a spoonful of salsa, top with large flakes of fish and drizzle over the dressing.
