- 800 gSteak
- 2.8 gSalt
- 2.3 gPepper
- 1.2 gRosemary
- 2 gThyme
- 7 gBell pepper
- 7 gChili powder
- 8 gGarlic powder
- 30 mlOlive oil

Make the rub
- Combine all dry seasonings in a bowl and mix well.
- Set aside.

Prepare steaks
- Brush steaks liberally with olive oil.
- Rub each side with the seasoning mixture.
- Let rest at room temperature for 30–45 minutes.

Sear
- Set up grill for indirect heat: one side very hot, the other medium.
- Place steaks on the hot side and cook 1 1/4 minutes.
- Rotate 90° and cook another 1 1/4 minutes to make cross-hatch marks.
- Flip and repeat on the other side (same sequence).

Finish cooking
- Move steaks to the medium zone and turn often until internal temperature reaches about 60 °C (140 °F) for medium; for medium-rare aim for 54–57 °C.
- Use a thermometer for accuracy.

Rest and slice
- Remove steaks, loosely cover with foil and rest 7–10 minutes.
- Slice thinly across the grain on the bias and serve warm.
