Ingredients

  • 800 gSteak
  • 2.8 gSalt
  • 2.3 gPepper
  • 1.2 gRosemary
  • 2 gThyme
  • 7 gBell pepper
  • 7 gChili powder
  • 8 gGarlic powder
  • 30 mlOlive oil

Instructions

    Make the rub

    • Combine all dry seasonings in a bowl and mix well.
    • Set aside.

    Prepare steaks

    • Brush steaks liberally with olive oil.
    • Rub each side with the seasoning mixture.
    • Let rest at room temperature for 30–45 minutes.

    Sear

    • Set up grill for indirect heat: one side very hot, the other medium.
    • Place steaks on the hot side and cook 1 1/4 minutes.
    • Rotate 90° and cook another 1 1/4 minutes to make cross-hatch marks.
    • Flip and repeat on the other side (same sequence).

    Finish cooking

    • Move steaks to the medium zone and turn often until internal temperature reaches about 60 °C (140 °F) for medium; for medium-rare aim for 54–57 °C.
    • Use a thermometer for accuracy.

    Rest and slice

    • Remove steaks, loosely cover with foil and rest 7–10 minutes.
    • Slice thinly across the grain on the bias and serve warm.
