- 350 gAsparagus
- 1.5 gSalt
- 45 mlOlive oil
- 3 pcsGarlic
- 24 gCapers
- 20 mlLemon juice
- 230 gChickpea
- 30 gParsley
- 10 gMint
- 100 gSpinach

Method
- Snap off the ends of the asparagus, then snap each stalk in half. Rinse well.
- Toss asparagus with the salt and 1 tbsp oil.
- Heat a non-stick pan over high heat. Add asparagus and char for about 5 minutes until lightly browned. Transfer asparagus to a (non-plastic) salad bowl.
- Add 2 tbsp oil to the pan, add the garlic and drained capers and fry for about 2 minutes. Pour the garlic oil over the asparagus.
- Drain and rinse the chickpeas, add to the bowl with the lemon juice and toss to combine.
- Chop the parsley and mint finely, add to the salad and toss well.
- Wash and dry the spinach leaves, add to the salad and toss gently. Serve immediately.
