  • 350 gAsparagus
  • 1.5 gSalt
  • 45 mlOlive oil
  • 3 pcsGarlic
  • 24 gCapers
  • 20 mlLemon juice
  • 230 gChickpea
  • 30 gParsley
  • 10 gMint
  • 100 gSpinach

    Method

    • Snap off the ends of the asparagus, then snap each stalk in half. Rinse well.
    • Toss asparagus with the salt and 1 tbsp oil.
    • Heat a non-stick pan over high heat. Add asparagus and char for about 5 minutes until lightly browned. Transfer asparagus to a (non-plastic) salad bowl.
    • Add 2 tbsp oil to the pan, add the garlic and drained capers and fry for about 2 minutes. Pour the garlic oil over the asparagus.
    • Drain and rinse the chickpeas, add to the bowl with the lemon juice and toss to combine.
    • Chop the parsley and mint finely, add to the salad and toss well.
    • Wash and dry the spinach leaves, add to the salad and toss gently. Serve immediately.
