  • 360 gChicken breast
  • 13.8 gOlive oil
  • 70 gOnion
  • 100 gMushroom
  • 100 gBell pepper
  • 42 gButter
  • 23 gFlour
  • 400 mlChicken broth
  • 3 gSalt
  • 2 gGarlic powder
  • 1 gPepper

    Preparation

    • Season the chicken breasts with salt, pepper and garlic powder, then cut into bite-size cubes.
    • Peel and dice the onion; slice mushrooms and prepare the pimentos.

    Sauté

    • Heat the olive oil in a skillet over medium-high heat.
    • Sauté the chicken cubes until lightly browned and nearly cooked through.
    • Add onion, mushrooms and pimentos and cook until onion is translucent.

    Make the sauce

    • Melt the butter in a saucepan over medium heat.
    • Stir in the flour and cook for about one minute.
    • Gradually whisk in the chicken broth and cook until thickened.

    Finish

    • Stir the sauce into the chicken and vegetables and simmer a few more minutes until the chicken is cooked through.
    • Season to taste and serve over biscuits, toast or English muffins.
