Preparation
- Season the chicken breasts with salt, pepper and garlic powder, then cut into bite-size cubes.
- Peel and dice the onion; slice mushrooms and prepare the pimentos.

- Heat the olive oil in a skillet over medium-high heat.
- Sauté the chicken cubes until lightly browned and nearly cooked through.
- Add onion, mushrooms and pimentos and cook until onion is translucent.

Make the sauce
- Melt the butter in a saucepan over medium heat.
- Stir in the flour and cook for about one minute.
- Gradually whisk in the chicken broth and cook until thickened.
