Preparation
- Preheat oven to 175°C (350°F).
- If needed, flatten chicken breasts to about 1.3 cm thickness.
- Grate Parmesan, prepare the breadcrumb mix and beat the eggs in a bowl.

Breading mixture
- Mix breadcrumbs, 25 g grated Parmesan, salt and black pepper in a bowl.
- Place flour on a shallow plate and beaten eggs in a second bowl.

Breading and frying
- Dredge each breast in flour, dip in egg, then coat thoroughly with the breadcrumb mix.
- Heat olive oil in a large pan over medium-high heat.
- Pan-fry the breaded breasts until golden on both sides (about 2–3 minutes per side). They do not need to be fully cooked through.
- Let drain briefly.

Baking
- Spread half of the tomato sauce (about 225 ml) in a shallow baking dish.
- Arrange the fried chicken breasts in the dish and spoon the remaining sauce over them.
- Sprinkle the remaining grated Parmesan over the chicken.
- Bake in the preheated oven for 30 minutes (175°C).

Finish and serve
- Remove from oven and place a slice of mozzarella on each breast (about 200 g total).
- Return to oven for 10 minutes until the mozzarella melts.
- Serve hot with pasta or a salad.
