  • 8 gOrange
  • 15 gGarlic
  • 4.5 gSalt
  • 600 gCherry tomato
  • 15 mlOlive oil
  • 680 gChicken breast
  • 227 gSpinach
  • 0.5 gPepper

    Preparation

    • Preheat oven to 200°C.
    • Place a large baking sheet in the oven to heat.
    • Mix dill, orange peel, garlic and salt in a medium bowl. Season with pepper.
    • Combine tomatoes, oil and 1 teaspoon of the dill mixture in a small bowl.

    Prepare chicken

    • Add chicken to remaining dill mixture in a medium bowl and toss to coat.
    • Cut four sheets of foil, each about 50 cm long.

    Assemble and bake

    • Arrange 1 cup (about 56–60 g) spinach per foil sheet.
    • Place one quarter of the chicken mixture on the spinach.
    • Spoon one quarter of the tomato mixture over the chicken.
    • Fold foil over and crimp edges tightly to seal.
    • Arrange foil packets in a single layer on the heated baking sheet.
    • Bake until chicken is just cooked through, about 15 minutes.
    • Transfer to plates and let stand 5 minutes before opening carefully.
