Preparation
- Preheat oven to 200°C.
- Place a large baking sheet in the oven to heat.
- Mix dill, orange peel, garlic and salt in a medium bowl. Season with pepper.
- Combine tomatoes, oil and 1 teaspoon of the dill mixture in a small bowl.

Prepare chicken
- Add chicken to remaining dill mixture in a medium bowl and toss to coat.
- Cut four sheets of foil, each about 50 cm long.

Assemble and bake
- Arrange 1 cup (about 56–60 g) spinach per foil sheet.
- Place one quarter of the chicken mixture on the spinach.
- Spoon one quarter of the tomato mixture over the chicken.
- Fold foil over and crimp edges tightly to seal.
- Arrange foil packets in a single layer on the heated baking sheet.
- Bake until chicken is just cooked through, about 15 minutes.
- Transfer to plates and let stand 5 minutes before opening carefully.
