Ingredients

  • 150 gPotato
  • 1 tspOlive oil
  • 50 gChorizo
  • 3 pcsEgg
  • 5 gParsley
  • 25 gCheddar

    Preparation

    • Peel (optional) and dice the potato evenly.
    • Chop the parsley and grate the cheddar.

    Pre-cook and fry the potato

    • Boil the potato cubes in salted water for 8–10 minutes until tender.
    • Drain and let steam-dry briefly.
    • Heat olive oil in a pan, fry the chorizo for 2 minutes, add the potato and fry a further ~5 minutes until slightly crisp.
    • Spoon the pan contents out and set aside.

    Make the omelette and serve

    • Wipe the pan and warm it over medium heat.
    • Beat the eggs and cook as an omelette (2–3 eggs).
    • When almost cooked, scatter chorizo, potato, parsley and cheese on top.
    • Fold the omelette and cook 1 more minute until the cheese melts. Serve immediately.
