- 1 pcsOrange
- 60 gDate
- 25 gPistachio
- 20 gMaple syrup
- 1 tspVanilla extract
- 1 tspCinnamon

- Heat plant milk in a pot, but do not let it boil
- Stir in cinnamon and salt
- Sprinkle in couscous and remove from heat
- Cover and let it soak
- Fluff with a fork

Cut fruit and dates
- Wash the orange thoroughly
- Finely zest the peel
- Segment the orange or cut into pieces
- Pit and chop the dates

Toast nuts and spice
- Briefly toast pistachios in a dry pan
- Toast cumin briefly
- Remove from heat

Mix and serve
- Squeeze any remaining orange parts for juice
- Stir maple syrup and vanilla into the couscous
- Fold in orange pieces and dates
- Top with pistachios and orange zest
- Adjust with lemon juice to taste
