  • 120 gCouscous
  • 250 mlOat drink
  • 1 pcsOrange
  • 60 gDate
  • 25 gPistachio
  • 20 gMaple syrup
  • 1 tspVanilla extract
  • 1 tspCinnamon
  • 1 tspCumin
  • 1 tbspLemon juice
  • 1 tspSalt

Instructions

    Let couscous soak

    • Heat plant milk in a pot, but do not let it boil
    • Stir in cinnamon and salt
    • Sprinkle in couscous and remove from heat
    • Cover and let it soak
    • Fluff with a fork

    Cut fruit and dates

    • Wash the orange thoroughly
    • Finely zest the peel
    • Segment the orange or cut into pieces
    • Pit and chop the dates

    Toast nuts and spice

    • Briefly toast pistachios in a dry pan
    • Toast cumin briefly
    • Remove from heat
  4. 4

    Mix and serve

    • Squeeze any remaining orange parts for juice
    • Stir maple syrup and vanilla into the couscous
    • Fold in orange pieces and dates
    • Top with pistachios and orange zest
    • Adjust with lemon juice to taste
