    • Wash the vegetables
    • Dice the zucchini
    • Dice the pepper
    • Halve the tomatoes
    • Finely dice the onion
    • Chop the herbs

    Whisk eggs

    • Whisk the eggs in a bowl
    • Season with salt and pepper
    • Stir in oregano

    Sauté vegetables

    • Heat oil in a nonstick pan
    • Sauté the onion until translucent
    • Sauté zucchini and pepper
    • Briefly sauté the tomatoes

    Cook omelet

    • Pour the eggs into the pan
    • Let set over medium heat
    • Crumble feta on top
    • Cover and cook through
    • Sprinkle with parsley
